     Roquefort Dressing

Ingredients
1/4 cup nonfat or 1 per cent low-fat cottage cheese
1/4 cup nonfat sour cream
3 tbsp low-fat or nonfat buttermilk
1/4 tsp garlic powder
2 tsp lemon juice
3 oz Roquefort cheese
ground black pepper
 

Instructions
In a food processor or blender, combine the cottage cheese, sour cream, buttermilk, garlic powder, lemon juice, and 2 oz of the Roquefort. Season with the pepper. Process until smooth. Transfer to a small bowl.
Crumble the remaining 1 oz Roquefort into the bowl and mix well. Cover and refrigerate for at least 1 hour or up to 2 days to allow the flavors to blend.
Nutrition- per 2 tbsp 51 calories, 3.3 g total fat, 2.1 g sat fat, 3.9 g protein, 1.6 g carbs, 0 g fiber, 10 mg cholesterol, 222 mg sodium
