Put meat on rack and bake 375 degrees for 1 hour. DO NOT OPEN OVEN DOOR.

|
Turn off oven and leave in for up to 2 hours.
|
|
|
To serve, turn oven on to 300 degrees.
|
|
|
Rare - 45 minutes.
Red rare - 50 minutes.
Medium - 55 minutes.
