     Belgian Waffles

Ingredients
2 cup all-purpose flour
1 tbsp plus 1 tsp baking powder
1/4 tsp salt
1 tbsp sugar
1 1/2 cups skim milk
1/2 cup frozen egg substitute, thawed
1/4 cup reduced-calorie margarine, melted
1/2 tsp vanilla extract
vegetable cooking spray
 
2 tbsp powdered sugar
sliced strawberries (optional)
fresh mint sprigs (optional)

Instructions
Combine first 4 ingredients in a medium bowl, and stir well. Combine, egg substitute, margarine, and vanilla in a medium bowl, stirring well; add to flour mixture. Beat at medium speed of an electric mixer until blended.
Coat a Belgian waffle iron with vegetable cooking spray; allow waffle iron to preheat. For each waffle, spoon 1/4 cup batter onto hot waffle iron, spreading batter to edges. Bake 4 to 5 minutes or until steaming stops.
Sprinkle powdered sugar evenly over waffles. If desired garnish waffles with sliced strawberries and fresh mint sprigs. Yield- 12 (4 inch) waffles (118 calories and 22 percent fat each).
Protein 4.0, fat 2.9, (saturated fat 0.4) carbohydrate 18.9, fiber 0.5, cholesterol 1/sodium 217.
