Combine cabbage, onion and optional carrot in a bowl and refrigerate at least one hour. Over low heat dissolve sugar in vinegar and oil. Add in salt and pepper and cool. Completely cool before adding to cabbage mixture. Chill in refrigerator for at least 1 hour.
