     Lemon Chicken

Ingredients
3-4 lbs chicken parts skin on bone in
2 T lemon zest
1/3 cup lemon juice
2 cloves garlic, crushed
2 T fresh chopped thyme or 2 t dried
1 T fresh chopped rosemary or 1 t dried
1 t salt
1 t pepper
2-3 T butter
 
Lemon slices for garnish

Instructions
Place lemon juice, lemon peel, garlic, thyme, rosemary, salt and pepper in a small bowl. Whisk to combine. Score each chicken piece. Place chicken in bag with marinade and places in refrigerate, rotating the bag several times over 2 hours. NO LONGER AND NOT OVER NIGHT!
Place skin side up in baking dish (reserve marinade for basting !). Bake at 425 for 50-55 min , basting with reserved marinade half way through.
Let rest covered in foil for 10 min before serving.
