Seafood - Grilled Shrimp with Tequila Marinade

Category   Entrees - Maindishes
Sub Category   None
Preptime   53 minutes

Ingredients
Marinade -
1/4 Cup tequila
1/4 Cup fresh lime juice
1 tsp. ground cumin
1/2 Cup olive oil
salt and pepper
2 tsp. Old Bay Seasoning
2 Pounds shrimp, 13 to 15 pieces per pound, shelled, deveined with tail on.

Wooden or stainless steel skewers
Lime slices for garnish.

Instructions
To prepare marinade, whisk together marinade ingredients. If using wooden skewers, soak them in water for at least one hour to prevent them from burning when grilled.
Thread shrimp onto the skewers. Lay in a shallow, nonaluminum dish, large enough to hold the skewered shrimp. Pour the marinade over the shrimp and marinade for 30 minutes up to 4 hours.
Prepare barbeque for medium-high grilling. Grill shrimp on each side for 3-4 minutes, until they are bright orange and desired doneness. Arrange on platter and garnish with lime slices.
NOTE- I used the 26 to 30 pieces per pound shrimp which worked very well. Grill only around 3 minutes.
