Place carrots in microwave-safe bowl, cover bowl with plastic wrap, and cook for 9-10 minutes (until still firm to the bite).
Drain off any liquid. Then in a separate bowl combine the remaining ingredients. Add to carrots; toss until carrots are completely coated with mixture.
Note- 1/2 to 1 tsp orange zest add terrific flavor.
