     Brown Rice Custard Treat

Ingredients
4 cups cooked brown rice
6 hormone-free eggs, lightly beaten
2 tsp pure vanilla
1 cup plain rice or soy milk
2 tsp cinnamon
1 tsp nutmeg
1/2 tsp sea salt
2/3 cup raw honey
 

Instructions
Preheat oven to 325 degrees. Combine eggs, vanilla, milk, cinnamon, nutmeg, sea salt, and honey and mix well. Stir in rice. Pour the mixture into a 9x13-inch nonstick baking pan. Bake 35-40 minutes, or until a toothpick inserted into the center comes out clean. Cool to room temperature. Scoop into dessert dishes or cut into squares.
Note- You may add raisins if you wish.
