1 1/2 lb lean beef or pork, cut into 1 1/2 inch strips
1 cup sliced fresh mushrooms
1 cup slice onions
1 tsp ginger
1/8 tsp pepper
1 lb can bean sprouts, drained
1/4 cup cornstarch
cup cooked rice
3 tbsp shortening
1 1/2 cup sliced celery
1/2 tsp salt
1 can beef broth plus water to equal 2 1/2 cup
5 oz can bamboo shoots, drained
1/4 cup toasted slivered almonds
1/4 cup soy sauce
5 oz oz can water chestnuts, drained and sliced
Instructions
Brown meat and mushrooms in shortening. Add onions, celery, ginger, salt, pepper, broth and water. Simmer, stirring occasionally, 20-30 minutes, until meat is tender.
Add bean sprouts, water chestnuts and bamboo shoots. Combine cornstarch and soy sauce; stir into mixture.
Simmer 10 minutes. Serve over hot cooked rice. Sprinkle with almonds. Makes 6 servings.
