     Potatoes Gratin

Ingredients
6 oz. Red Potatoes - Cut into bite size wedges
1 oz. Bacon - Cut into 1/4 inch strips
1/2 oz. Onion - Small dice
1 oz. Cabbage - Thick shred (batonnet size)
2-3 oz. Cream
Cream Cheese as needed
 

Instructions
Cut potatoes into bite size wedges. Lightly coat with olive oil, salt & pepper. Roast in 350 degree oven until tender.
Render the fat from bacon and then add onion. Saute until onion is soft and golden brown. Add cabbage, potatoes, cream and stir to coat. Simmer until nape consistency.
Place potatoes and sauce in a ramekin, dollop with cream cheese and place under salamander until bubblicious and golden brown. YUM - )
Serving Suggestions
Watch carefully under salamander, can burn QUICK!
