     Pumkin or Squash Black Bean Bake

Ingredients
1lb ground beef
2C 1/2 inch pieces peeled pie pumkin or winter squash; 2 packages frozen squash can be substituted
1 medium onion, coarsely chopped
1 15 oz can black beans, drained and rinsed
1 C whole kernal corn
1 minced jalapeno, seeded
1/2 t salt
1/2 C beef broth
3 oz cream cheese, softened
 
2 C corn meal
1 egg ligthly beaten
1/3 C milk
1/3 canned pumpkin or squash
Jalapeno-Olive Relish-
1/4 C diced green olives
1-2 jalapeno peppers
6 cherry tomatoes, quartered
1-2 T snipped fresh cilantro

Instructions
Preheat oven to 400 degrees. Cook ground meat, pumpkin or squash, onion over medium heat until meat is browned {if using frozen squash, add after meat is browned}. Drain fat. Stir in black beans, corn, chile, and salt. Heat. Stir in cream cheese, blend. Transfer to 2 1/2 quart baking dish.
In a medium bowl, stir together corn meal, egg, milk, and canned pumpkin [or pureed squash,or frozen squash]. Spoon over beef mixture, leveling. Gently pour broth over top. Bake 20 minutes.
JALAPENO-OLIVE RELISH- combine olives, chile, tomatoes, cilantro. Gently stir. Serve on top.
Good words for eats----you could easily double the size of the relish recipe and still not have any left over.
