     Lamb or Chicken Greek Gyros

Ingredients
1 lb. ground Lamb or Chicken
salt and pepper
1 tsp. ground Cumin
1 tsp. ground corriander
1 tsp. sweet paprika
2 garlic cloves minced
2 Tbsp. chopped fresh mint
2 Tbsp. chopped fresh cilantro
2 Tbsp.plain yogurt
 
2 Tbsp. EVOO
1/2 cucumber thinnly sliced
1 plum tomato thinnly sliced
1/2 onion thinnly sliced
1 small romaine heart shredded
juice of 1/2 lemon
2 pitas -warmed
1/2 c. sour cream
1 Tbsp. Italian seasoning

Instructions
Combine meat and spices, garlic, herbs and yogurt, and sour cream to form 4 very thin 1/2 inch thick patties.Heat 2 Tbsp. of oil to skillet over medium heat and cook the patties until they are golden brown and cooked through, 3 to 4 minutes on each side.
Dress the sliced vegies and lettuce withlemon juice, a liberal drizzle of the EVOO , salt and pepper. Slice the tops of the pitas to open up the pockets. Layer two patties and half the veggies into each pita and serve.
Extra sauce- Mix together 1 c. cucumber ranch, 1 tbsp. sugar and 1 cup sour cream together. Add 1/4 c. water and mix well. pinch fo salt and pepper.
