     Green Chile Chicken Tamales

package dried corn husks
tomatillos, rinsed
serrano chiles, stemmed
large garlic cloves, chopped
olive oil
shredded cooked chicken
cilantro
dry tamales leaves
corn dough
 

Instructions
Every year, a week before christmas, my mom spends countless hours making delicious homeade tamales. I remember all my siblings offerring to help make them, only to get a chance to taste the green chile tamales. My mom only makes tamales once a year, so naturally, we were all craving them. I mean, I offered to help as well, not only to get a taste of the tamales, before anyone else, but to be nice too. Tamales are not too difficult to make, in my opinion, but it sure did take a long time to make. This is partly because my mom and I would chat and gossip about everything, while making them. Regardless, my mom and I enjoy making tamales each year, it reminds us that no matter what difficulties we may have, family will always be there. Since all our family comes over to our house for christmas, making green chile tamales has become our family tradition.
To begin with, my mom would buy the dough fresh from a local market. Then, once we were home, we would steam the chicken, and serrano chiles, and tomatillos in a separate pot.
After the serrano chiles, and tomatillos are done steaming, we then place them all in a blender, along with the garlic cloves. Then we add a little salt and pepper, and the salsa for the tamales is finished. Once the chicken finished cooking, we would shred it into semi-thin pieces.
Afterwards, we would lightly spread some of the dough into tamale leaves, and then place some of the shredded chicken into the center of the dough.Then, we would pour about 2 tablespoons of the green salsa on the chicken. Finally, we would wrap up the tamales and cook them in a large pot for about an hour and a half.
