Trim and slice the pork. Blend 2 Tbsp oil with remining ingredients. Pour over pork, mariate for 4-6 hours.
Heat remaining oil in a wok. Drain pork but reserve the marinade. Fry pork throughly. Drain excess oil. Add marinade and continue to fry until all the liquid has evaporated. Serve with rice.
