From the youngest memories that I have, I can always remember my favorite meal my mother cooked- chicken spaghetti. My mother created her recipe for chicken spaghetti with my aunt when they were in high school. The recipe is fairly simply but time consuming, however the benefits pay off- this dish heats up extremely well and can be enjoyed really for any meal of the day. Chicken spaghetti has become a tradition in my family with everyone getting in the kitchen to help cook before joining around the table to enjoy the meal together. I would often sneak into the kitchen for a midnight snack after chicken spaghetti night and find my brother also attempting to finish the leftovers. This recipe is absolutely delicious and you'll find that it could bring your family together too.

Preheat oven to 350 degrees. In medium pot, cover chicken with chicken broth and water for boiling. Once chicken comes to a boil add 1 tbs chicken bouillon. Remove cooked chicken and save chicken broth to the side. At the same time, saute bell peppers and onion in large skillet with about 2 tbs of olive oil. Add soup and tomato sauce. Mix thoroughly and simmer for about 10 minutes. Cook pasta in boiling water for max time of 6 minutes. Drain and set aside. Add chicken to the skillet mixture, mixing well while combining. Use the left over chicken broth to thin the mixture and mix thoroughly. Allow to simmer on low heat for a few minutes. If still thick, add some more chicken broth. Spray 9x13 glass baking dish with Pam to prevent sticking. Add pasta spreading evenly throughout the dish. Pour chicken sauce mixture over pasta mixing thoroughly to cover all pasta.
