Instructions
Everytime I would go visit my mom in Arizona, she would always have freshly made banana bread on the table when I arrived. It was always a treat to see her, because I knew I would undoubtedly get my favoroite snack. The whole house would be neat and tidy when I got there. Everything had its place in her house. My baby pictures were scattered around, along with pictures of the rest of out swedish family. My mom and I were never close. Besides out Swedish heritage this was the one thing that brought us together. I would finally get some quality time with her while muching on my favorite snack. These were some of my most treasured memories with my mom as a child.
Preheat oven to 350 degrees. Grease the bottom and sides of a 9x5 inch loaf pan. In a large bowl whisk together the flour, sugar, baking soda, and salt. In a medium bowl mix the mashed bananas, eggs butter and vanilla. Pour the mixture into the dry ingredients and beat until it is thick and chunky. Cook for 1 hour. Let cool for exactly 5 minutes. Take out at let cool completley on a wire rack.
