Ground turkey is the ideal healthy substitute for other ground meats. Cook noodles until tender but firm, then drain and set aside. In large saucepan, saute turkey and onion in oil until turkey is no longer pink and onion is soft, about 10 minutes. Add green pepper, tomato sauce, Parmesan cheese and seasonings. Cover and simmer on low heat for 10 to 15 minutes. Place 3 noodles along the bottom of a greased 3.5 L (9x13inch) baking dish. Spoon one-half the turkey mixture over noodles. Add a second layer of noodles. Spread cottage cheese over noodles, then add a third layer of noodles. Pour remaining turkey mixture on top and sprinkle with cheddar or mozzarella cheese and sliced black olives if desired. Bake at 180°C(350°F) for 35 to 40 minutes until bubbly throughout. Let stand 10 minutes before slicing to serve. Makes 6 servings. .. Variaton- Substitute 500 mL (2 cups) chopped leftover turkey meat for ground turkey.
