4 Tbls. of unsalted butter or oliver oil
|

2 medium yellow onions, chopped
|

2 cloves of garlic, minced
|
|
Pumpkin, roasted and cut into wedges
|
|
4-5 cups of vegetable broth
|
|
1/4 cup of milk
|
|
nutmeg
|
|
cayenne or chili pepper
|
|
oregano
|

Instructions |
|
|
Melt butter in a large saucepan over medium high heat. Add onions and garlic, cook until onions are glassy.
|

Add pumpkin and broth and heat to boil then reduce heat and simmer 10 to 15 minutes.
|
|
|
Add spices to taste. Blend using food processor or hand blender until creamy and smooth.
|
|
|
With soup over low heat, add milk and mix. Adjust seasonings to taste.
