6 uncooked jumbo shrimp (about 1/3 pound), peeled and deveined
1 teaspoon lemon-pepper seasoning
Instructions
In a small food processor, combine the cilantro, ginger and garlic; cover and process until cilantro and garlic are chopped. While processing, gradually add oil and lemon juice in a steady stream until smooth. Transfer to a small serving bowl; set aside.
Thread shrimp onto two metal or soaked wooden skewers. Sprinkle with lemon-pepper. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack.
Grill, uncovered, over medium heat or broil 4 in. from the heat for 5-8 minutes on each side or until shrimp turn pink. Serve with cilantro sauce.
