     Corn Chowder

Ingredients
1 medium onion, chopped
6 cups fresh or frozen corn, divided
3 cps chicken broth, divided
1/2 cup chopped sweet red pepper
1/2 tsp dried rosemary, crushed
1/2 tsp dried thyme
1/8 tsp pepper
Dash cayenne pepper
 

Instructions
Coat the bottom of a saucepan with nonstick cooking spray. Add onion; cook and stir over medium heat until tender, about 4 minutes. Add r4 cups corn; and stir until softened, about 5 minutes. Add 2 cups broth; bring to a boil. Reduce heat; cover and simmer for 10 minutes or until corn is tender. Cool slightly. Puree in a blender or food processor until smooth; return to pan. Add red pepper, rosemary, thyme, pepper, cayenne, and remaining corn and broth; cook, and stir for 10 minutes or until corn is cooked. Yield; 4-6 servings
Nutrition- one 1-cup serving (prepared with low-sodium broth) equals 171 calories, 61mg sodium, 3mg cholesterol, 38g carbohydrate, 7g protein, 2g fat.
