Bring water and pasta sauce to boiling. Stir in uncooked pasta. Return to boiling; reduce heat. Cover and simmer for 12 minutes; stirring occasionally. Meanwhile, run water over vegetables in colander to thaw. Press vegetables to remove excess moisture. Transfer vegetables to a large bowl. Add the oil, salt, and the pepper. In a separte boil combine 1/2 c mozzarella cheese, parmesan and oregano. Spoon cheese into the center of the skillet and the vegetables around the edge. Cover and simmer for 10 minutes or until vegetables are crisp-tender. Just before serving sprinkle with remaining mozzarella.
