     Halibut with Lemon-Caper Sauce

Ingredients
Halibut with Lemon-Caper Sauce
4 halibut steaks
salt and fresh ground pepper, to taste
Lemon-Caper Sauce
1/2 cup white wine
2 tablespoons butter
3/4 cup scallions,
finely chopped 2 cloves minced garlic
2 tablespoons capers, drained
 
1 teaspoon fresh parsley, finely chopped
1/2 teaspoon fresh lemon zest
1 tablespoon fresh lemon juice

Instructions
Season both sides of fish with salt and pepper; place in hot non-stick saute pan (about 3-4 minutes each side); set aside and keep warm; in the same pan, add butter and saute capers (about 1 minute) add garlic and scallions and cook for about 1 minute; add wine, lemon zest and lemon juice and cook an additional 1-2 minutes; spoon over halibut and serve immediately.
Serve on a bed of white rice.
