     Spaghetti Casserole

Ingredients
1 lb Italian sausage (spicy or mild, to taste)
1 large onion, coarsely chopped
1 tbsp olive oil
1-2 cups marinara sauce, homemade or prepared
1 lb angel hair pasta
1 pt small curd cottage cheese
Italian bread crumbs
1 lb mozzarella cheese, grated
 

Instructions
Remove the sausage meat from the casings. Fry the sausage meat and the onion in olive oil until the sausage crumbles and the onion is soft. Add just enough marinara sauce to the sausage and onion to make a thick mixture.
Cook and drain the pasta following package directions.
Preheat oven to 375 degrees. Cover the bottom of a deep baking dish with a layer of cooked pasta. Cover the pasta with a thin layer of sauce and sausage mixture. Add a thin layer of cottage cheese next. Sprinkle bread crumbs over the cottage cheese. Cover the bread crumbs with a layer of mozzarella. Then repeat the layers, making sure that mozzarella is the layer at the top.
Bake covered for 45 minutes. Remove and cover and bake for another 15 minutes to give the casserole a nice crust.
Serving Suggestions
Extra Point-- Vege version of recipe, sub green pepper and mushrooms for the sausage. Use hot peppers flakes to add spiciness, if desired.
