Brown beef and drain; set aside. In a large bowl, add the cream cheese and microwave on low for a couple of minutes, until softened. Stir in the ROTEL and sausage and microwave another couple of minutes on medium; stir. Stir in the Monterey Jack cheese, and any additional stir-ins; microwave another couple of minutes on medium until well mixed and thoroughly warmed through. Transfer to a crockpot to keep warm, stir occasionally. You can also just dump everything into the crockpot and let it do the work - it just takes a bit longer to get hot. I prefer to microwave it first. Serve with corn chips or tortilla chips.
