     Stuffed Mushrooms

Ingredients
2 medium onions, minced
4 tablespoons butter
4 tubes Ritz crackers, finely crumbled
2 tablespoons parsley
1 - 14 1/2 oz. can chicken stock
1 pound lump crabmeat
5 - 8 oz. packages fresh button mushrooms
Salt and pepper to taste
 

Instructions
Saute onions in 1 tablespoon butter over medium heat, just until onion is transluscent, not brown. Add Ritz crackers, one tube at a time, stirring frequently. Add rest of butter into mixture, this wil help to brown the crackers. Stir in parsley.
Once all of the crackers have been added and slightly browed, begin to add the chicken stock a little at a time. You are looking for just enough liquid to barely soak the cracker crumbs. Cook very slowly over low heat for 5 minutes.
Break up and clean the crabmeat into a seperate bowl, pay close attention and look for any shell pieces and remove them. Remove pan from heat and add the crabmeat to the mixture mix thoroughly. Let mixture cool completely. Stuff each mushroom and arrange in a single layer on a foil pan or broiling pan.
Bake in conventional oven at 325 degrees for 10-12 minutes. OR Bake in toaster oven at 325 degrees for 8-10 minutes.
