     Mexican Chicken Soup

Ingredients
2 cups cooked, chopped chicken or turkey
1 can black beans, drained and rinsed
1 can pinto beans, drained
1 can Rotel (or generic brand)
1 can cream of chicken soup
3 cups chicken broth
1 can diced tomatoes (optional)
1 envelope taco seasoning
1 envelope ranch dressing or dip mix
 
1 onion, chopped (optional)
1 tsp cilantro (optional)
Tortilla chips

Instructions
Combine all ingredients except chips in heavy saucepan. Bring slowly to a boil. Reduce heat, cover, and simmer for at least 30 minutes, stirring occasionally.
Soup is best if prepared a day ahead of time, cooled, refrigerated, and reheated before serving.
Serve with tortilla chips.
