     Fried Rice

Ingredients
Cooked rice, about 2 cups
1 egg
soy sauce to taste (approx. 1/4 cup)
chopped carrots or cabbage (optional)
1/8-1/4 cup oil (canola, vegetable or olive)
 

Instructions
Heat oil in large skillet over medium high heat. Add rice and stir about 2 minutes until heated through.
Make opening in center of rice and crack egg. Scramble egg then mix with rice. Cook another couple of minutes, stirring frequently.
Add soy sauce until rice is fairly dark and cook 2 more minutes to blend flavors, stirring frequently. Serve immediately.
