     Charlie's Potatoes

Ingredients
3 lbs. of potatoes, slice thin
1 medium onion, sliced thin
1 1/2 sticks butter
3-4 Tb. flour
1 1/2 pints milk (or half-and-half)
1 lb. Cracker Barrel sharp cheddar cheese
 

Instructions
Melt the butter of medium heat in a saucepan, add the flour and stir to make a paste. Slowly add milk, stirring constantly to thicken. Cube or grate cheese and add to sauce, melting, until a smooth consistency.
Layer in 9x13 pan (sprayed with Pam) potatoes, onions, cheese sauce. Continue layering until done.
Bake about 1 hour at 350 degrees F, until brown and bubbly.
