     Impossible Brunch Pie

Ingredients
2 lbs pork sausage
1 bell pepper, chopped
1 onion, chopped
3 cups frozen hashbrowns
2 cups shredded cheddar cheese, divided
1 cup baking mix
2 cups milk
1/4 t pepper
4 eggs, beaten
 

Instructions
Heat oven to 400. Grease 13x9 pan and set aside. In large skillet cooksausage, bell pepper and onion over medium heat, stirring frequently, until sausage is no longer pink; drain well. Stir together sausage mixture, potatoes and 1 1/2 cups cheese in prepared baking dish. In a medium bowl, combine baking mix, milk, pepper and eggs and whisk until blended. Pour into baking dish over sausage and potatoes. Bake uncovered for 40-45 minutes or until knife comes out clean. Sprinkle with remaining cheese and bake 1-2 minutes longer. Cool 5 minutes slice and serve. (I omit the pepper and onions) (Time saver-use chopped frozen link sausage instead of bulk sausage)
