     Pineapple Tapioca Pudding

Ingredients
1 can frozen pineapple juice & 3 cans of water
1 cup cashews
6 T. tapioca
1 can crushed pineapple
 

Instructions
Blend first 3 ingredients until smooth. Make sure the cashews are blended to a creamy state.
Pour into pan and stir until it bubbles. Careful to stir continually so it doesn't burn or stick.
Add can of drained crushed pineapple. When cool to touch cover and cool in refer.
Serving Suggestions
Add fresh berries to cold pudding when you serve.
