     Sauerkraut Cake

Ingredients
2/3 cup butter or margarine
1 1/2 cups sugar
3 eggs, beaten
1 tsp vanilla
2 1/4 cups all-purpose flour
1/2 cup cocoa
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
 
1 cup water
2/3 cup sauerkraut, rinse, drain and chop

Instructions
Blend together the butter and sugar. Beat in the eggs and vanilla. Sift dry ingredients together. Add alternately with water. Stir in sauerkraut.
Turn into two 8-inch cake pans (or one 9x13-inch pan.) Bake until center springs back when lightly touched.
Bake at 30 degrees for 30 minutes. Ice with Mocha whipped cream or a powdered sugar icing.
