Pare eggplant, cut into 1/4 inch thick slices. Dip each slice into eggs, then into crumbs. Saute in skillet until golden on both sides.
In large casserole, layer eggplant, ground beef, cottage cheese, tomato sauce and seasoning. Sprinkle on Parmesan cheese. Repeat; topping last layer with tomato sauce and Parmesan cheese.
Bake 350 degrees uncovered, 1/2 hour or until sauce is bubbly.
