     Cardamom Apple Crisp with Caramel Cream

Ingredients
4 medium tart baking apples, peeled, sliced (4 cups)
1/3 cup plus 2/3 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup quick cooking oats
1/2 to 3/4 tsp ground cardamom
1/4 tsp ground cinnamon
1/3 cup cold butter or margarine
1/4 cup chopped pecans, if desired
1 cup heavy whipping cream
 
1/4 cup caramel topping

Instructions
Heat oven to 375 degrees. Grease bottom and sides of 8-inch square baking dish with shortening or cooking spray. In medium bowl, toss apples with 1/3 cup of the brown sugar. Spread apples in dish. In another bowl, stir remaining 2/3 cup brown sugar, the flour, oats, cardamom and cinnamon until well mixed. Cut in butter, using pastry blender, until mixture looks like coarse crumbs. Stir in pecans. Sprinkle over apples.
Bake 30-40 mins or until topping is golden brown and apples are tender when pierced with fork. Cool 45 mins before serving.
In chilled large deep bowl, beat whipping cream and caramel topping with electric mixer on high speed until stiff peaks form. Serve caramel with warm crisp. Drizzle with additional caramel topping.
