     Banana-Nut Bread

Ingredients
1 3/4 cup All Purpose Flour
1/2 cup Sugar
2 1/2 teaspon Baking Powder
1/2 teaspoon Salt
1 lg Egg, Lightly Beaten
1 cup Mashed Ripe Banana (about 2 lg)
1/2 cup Milk
1/3 cup Vegetable Oil
1/2 cup Choppen Pecans
 

Instructions
Stir together first 4 ingredients in large bowl; make a well in center of mixture. Combine egg, mashed banana, milk, and oil; add mixture to dry ingredients, stirring just until moistened. Stir in pecans. Spoon batter into 4 lightly greased 4 1/2- x 2 1/2-inch loafpans.
Bake at 350° for 32 to 34 minutes or until a wooden pick inserted in centers comes out clean. Cool in pan on a wire rack 10 minutes; remove from pans, and cool completely on wire rack. Yield 4 mini loaves.
