     Armadillo Eggs

Ingredients
Jalapenos, at least 14 (the larger the better)
Bacon, 2 -3 packs depending on how many jalapenos
cream cheese - 2 tubs any size
toothpicks
 

Instructions
Preheat oven to broil before starting. cut off stems on jalapenos, then cut each pepper in half so both sides are even. Hollow out membranes in each jalapeno - use a small spoon. Make sure all seeds are removed as well.If you want to make them hot you may want to leave a few seeds behind. keep in mind each little seed packs a powerful punch!
fill each hollowed out membrane with cream cheese. Easiest to do this with a butter knife.
take 1 piece of bacon and wrap jalapenos. secure both sides with a toothpick. if the Jalapenos you made are small you can use 1 piece of bacon for 2 halves.
Cook in oven for 25 minutes or until bacon is done. If you like your bacon rubbery it will take less time. I have found crispy to burnt bacon tastes the best. take out and enjoy!
