Mix coating and store in airtight container. Separate about 3/4 cup for use now. If more is needed dip more out using clean utensil. Amount of butter and coating needed will depend on amount of chicken used.
Heat oven to 375 degrees and line with sprayed foil a 9x13 baking pan.
Dip chicken in margarine and then in potato flake mixture to coat. Bake for 45 minutes or until done (cooking time depends on size and type of pieces used).
