     Roasted Red Cabbage

Ingredients
1 head red cabbage, chopped into bite size pieces
1 large onion, sliced finely
1 apple, chopped
3 tbsp brown sugar
2 tbsp white or red wine vinegar
3 tbsp butter
 

Instructions
Mix cabbage, onion and apple together. Place on jelly roll pan, covered with foil - leave foil long enough to fold sides over to create a lid.
Mix sugar, vinegar and butter together. Melt and pour over the cabbage.
Cover and roast for 60-90 minutes. Stiring once or twice during cooking.
