6 medium potatoes (about 2 lbs)

4 eggs
|

2 stalks celery
|
|
1 green bell pepper
|

sweet and sour pickle chips
|

light mayonnaise
|
|
salt and pepper to taste

Instructions |

|
Boil potatoes in saucepan; drain. Boil eggs in separate sauce pan; chill in ice water.

Cube cooked potatoes and add them to a large bowl. Peel eggs, finely chop, and add to potatotes.
|
|
|
Chop green pepper, celery, and pickles and add to potatoes. Add salt and pepper to taste. Add mayonnaise and stir, eyeballing the amount.
|
|
|
Chill for at least an hour before serving.
