1 cup corn meal

1 cup flour

1 egg

1 cup buttermilk or milk

1 tsp salt

1 Tablespoon sugar

1/2 tsp pepper

1/2 tsp baking powder

1/2 tsp baking soda

1/2 medium onion, finely chopped

1/3 cup corn, drained

Instructions |

Mix dry ingredients together. Add milk and egg. Stir to mix well. Set aside for at least five minutes.

Heat oil to 350F. Drop batter by tablespoonful into hot oil. Cook until golden brown. Turn if needed. Drain on paper towel.
