     Peach and Pecan Muffins

Ingredients
3 cups whole wheat pastry flour
1 tbsp ground cinnamon
1/4 tsp nutmeg
1 tbsp baking soda
1 tsp salt
3/4 cup chopped raw pecans
1/2 cup canola oil
6 oz nondairy yogurt or sour cream
1 tsp vanilla extract
 
2 tbsp white distilled vinegar
1/2 cup granulated sugar
1 cup packed light brown sugar divided
2 and half cups peeled , pitted , and chopped peaches
pecans or finely ground for sprinkling

Instructions
Preheat oven to 400 lightly grease 16 muffin cups or insert liners In large bowl ,mix flour , cinn, nutmeg , baking soda ,and salt .Add pecans and stir .
In a seperate bowl , mix oil, yougurt , vanilla , vinegar , gran sugar ,3/4 cup brown sugar , and peaches .Stir the oil mix into the flour mix until just moist .Spoon into prepared muffin cups .Sprinkle remaining 1/4 cup brown sugar and finely ground pecans on top of each muffin .
Bake for 25 minutes , until toothpick comes out clean . Cool for ten minutes before turning out muffins onto wire racks to cool completely .
Serving Suggestions
a 15 oz can of peaches drained also works
