     Potato Chowder

Ingredients
2 Tablespoons butter
1/2 onion fnely diced
1 stalk celery diced
2 Tablespoons flour
2 cups chicken broth, hot
2 cups milk
3 medium potatoes diced
salt
pepper
 
1 Tablespoon parsley flakes

Instructions
Melt butter in large pot. Add celery and onion. Cook until soft. Sprinkle flour over this and cook for about three minutes. Add broth, milk and potatoes. Season to taste and add parsley flakes. Simmer until potatoes are soft about 45 minutes. Garnish with fresh parsley if desired.
If it is not as thick as you like either use left over mashed potatoes or potato flakes to thicken. If you don't have broth boil two cups of water with 2 chicken bouillon cubes.
