Ingredients
2 Pie shells
500 ml whipping cream
10 eggs (regular size)
1 Onion, diced
1 Bell pepper, diced
1/4 tsp salt
1/2 tsp black pepper
---Filling---
1/2 package bacon, chopped and fried
 
1 cup grated cheddar cheese
1/4 tsp cayenne pepper
1 tbsp fresh thyme
1/2 tsp curry powder
---Alternate filling---
1 cup grated Swiss Cheese
Fennel Sausage, cooked & crumbled
Diced Jalapenos
Cilantro & Chives

Instructions
Preheat oven to 425 degrees. Layer bacon, onion, bell pepper, cheese, and thyme in the bottom of the pie shells.
Lightly whip eggs in a large bowl. Add all remaining ingredients and mix thoroughly. Ladle evenly into the pie shells.
Place quiche in oven. After 15 minutes reduce heat to 300 degrees.
When an inserted knife comes out clean remove from oven. Let sit for 10 minutes before serving.
