Ingredients
SAUCE
64 Oz Canned Tomatoes I puree in food processor
32 Oz Cascones Spaghetti Sauce
2 tsp Salt and Pepper each
2 tsp Sugar
1 Tbl. Basil
Garlic Powder to taste
1 Cup Vegetable Oil
Minced Onion to taste
 
4 Tbl Parsley
2 Boxes Manacotti Shells UNCOOKED
FILLING
28 Oz. Racotta Cheese
8 Oz Shredded Motzarella Cheese plus enough for topping
1/2 Cup Parmesean Cheese
2 tsp Sugar
Salt and Pepper to taste
2 Eggs beaten

Instructions
Combine the first 9 ingredients. Simmer 30-45 minutes. YOU CAN ADD COOKED HAMBURGER OR SAUSAGE TO YOUR SAUCE THEN SIMMER.
Combine all ingredients for the filling. Stuff each uncooked shell with the filling.
Cover the bottom of 9x13 pan with Sauce. Put the stuffed shells over sauce in pan. Fits 10-12 shells. Cover shells with more sauce.
Bake 350 covered with foil until shells are cooked and Manacotti is bubbly. 45minutes to 1 Hour. Top with Motzarella cheese the last 30 minutes before done.
Serving Suggestions
MAKES 2 9X13 PANS Freezes Great. Double foil if you freeze.
