Sift flour, baking powder, salt together. Cream Shortening and sugar well. Add eggs and vanilla and mix well. Add dry ingredients and milk. Roll and cut cookies. Sprinkle with sugar and bake at 375 degrees 12 minutes.
Brown sugar- Use firmly packed brown sugar, not white.
Caraway- Sprinkle cookies with caraway seeds
Chocolate- Add 2 ounces melted chocolate to creamed mixture.
Lemon- Use Lemon extract instead of vanilla
Maple Sugar- Use maple sugar instead of granulated
Sand Tarts-Omit 1 egg. Reduce flour to 1 3/4 Cups. Brush cookies with egg white. Sprinkle with sugar, cinnamon and blanched almonds. Bake as usual.
Spice- Sift 1/4 tsp cinnamon,allspice and cloves with dry ingredients

Make dough. Separate into 3 bowls. Color with food coloring to make orange, yellow and red. divide again so you end up with 3 of each color. Put three balls of each color on your board and roll out. Using a leaf cookie cutter cut out leaves having all colors in each cookie.All cookies should have three colors. Sprinkle with sugar and bake as directed.
