Preheat oven to 350. In a small bowl, cream the sugar and butter. Add egg and combine. Mix in the banana and vanilla.
Combine the dry ingredients and add to the wet ingredients. Scoop into muffin pans 2/3 full and bake for 23 -28 minutes. For mini-muffins bake for 10-14 minutes.
Caramel topping- 2 tblsp. butter, 1/4 c brown sugar, 1 tblsp. milk, 1/2 c powdered sugar. Mix all ingredients, except powdered sugar, over the stove top. When cooled whisk in powdered sugar. Drizzle over cooked muffins.
