Instructions
Preheat the oven to 400.
Mix a dash of any of the spices you like in a small bowl or cup...I used the Old Bay, dill, rosemary, onion powder and garlic powder. Rub the dry mixture onto the Mahi Mahi. Drizzle olive oil on the fillets.
Rip a fairly large piece of aluminum foil for each fillet. Place the piece of fillet in the middle of the foil and loosely fold the foil like a pouch or envelope.
Place the pouches on a baking tray and bake for 20 minutes....remove from the oven and let sit in the pouch for 2 or 3 minutes. ENJOY!
