     Vegan Chili

Ingredients
1 (14 oz) cans black beans, drained and rinced
1 (14 oz) can kidney beans, drained and rinced
1 (14 oz) can diced tomatoes, not drained
1 small onion, diced
1 bell pepper, diced
1/2 cup vegetable broth
1/2 tsp cayenne pepper
1/2 tsp cumin
2 tbsp chili powder
 
1/2 tsp red pepper flakes
3 garlic cloves, crushed
Salt and pepper to taste

Instructions
Saute bell pepper for 2 minutes, then add onion. Saute for an additional 2 minute.
Add a can of petite diced tomatoes, the vegetable broth and spices
Reduce to a medium low heat and add beans. Simmer for at least 20 minutes stirring occasionally
Serve as a chili or on top of baked potatoes or hot dogs with sour cream and cheese.
