     Mom's Baklava

Ingredients
16 oz of phyllo dough
1 lb chopped nuts, walnuts or pecans
2 C Butter
1 tsp ground cinnamon
1 Cup water
1 Cup White Sugar
1 Slice of Fresh Lemon with Skin on
1 tsp vanilla extract
1/2 Honey
 

Instructions
Butter the bottom and sides of a 17 X 12 inch cookie sheet and Preheat oven to 350 degrees.
Chop nuts and toss with cinnamon. Set aside. Unroll Phyllo dough and cut entire stack in half to fit in pan. Cover with damp cloth. Place two sheets of dough in pan and butter throughly. Repeat until you have 8 sheets layered. Sprinkle 3 to 4 Tbs of nut mixture on top. Top with two sheets of dough, butter and nuts. The top should be 8 to 10 layers deep with no nuts.
Using a sharp knife cut diagonally into diamond shapes all the way through the pan. Bake for 50 minutes until the baklava is lightly golden and crisp. (DO NOT BURN)
While the baklava is baking. In a heavy saucepan, boil sugar, lemon and water until sugar is melted. Add vanilla and honey. Simmer for 20 minutes. Remove lemon. Remove Baklava from oven and immediately spoon sauce over it. Let cool. Leave uncovered, it will get soggy if covered. Can be frozen. Thaw to room temperature before serving.
