     Roasted Salmon with Green Herbs

Ingredients
One 2-21/2. lb skinless salmon filet
Kosher salt and black pepper
1/4 cup olive oil
2 tbs freshly squeezed lemon juice
1/2 cup minced scallions - white and green parts (4 scallions)
1/2 cup minced fresh dill
1/2 cup minced fresh parsley
1/4 cup dry white wine
 

Instructions
Preheat oven to 425 degrees. Place salmon filet in glass, ceramic, or stainless-steel roasting dish and season generously with salt and pepper. Whisk together olive oil and lemon juice and drizzle mixture evenly over salmon. Let stand for 15 minutes at room temperature.
In a small bowl, stir together scallions, dill, and parsley. Scatter herb mixture over salmon fillet - both sides coated. Pour wine around the fix fillet.
Roast salmon for 10-12 minutes until almost cooked in center at the thickest part. Check center with tip of small knife. Covertightly with aluminum foil and allow fish to rest 10 minutes. Cut salmon crosswise and serve with lemon wedges.
