2 bell peppers, chopped ( I use 1 red and 1 green)
1 (15 ounce) cans black beans, rinsed and drained
1 (15 ounce) cans pinto beans, rinsed and drained
2 cups frozen corn kernels
1 1/2 cups salsa
Instructions
Preheat oven to 350 degrees.
Mix all ingredients together and pour into a casserole dish.
Bake, covered, for 30 minutes. Uncover and bake for 15 minutes more or until heated through.
I like this as is, but you could serve it over rice.
